Brownie Bites:

  • 1/2 cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt

Topping:

  • 12 soft caramel candies, unwrapped
  • Flaky sea salt for topping

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin pan.
  2. Melt Butter and Chocolate: In a medium saucepan over low heat, melt the butter and chocolate chips until smooth. Remove from heat.
  3. Combine Ingredients: Whisk in granulated sugar and brown sugar. Let cool slightly, then add eggs one at a time and vanilla extract. Sift in flour, cocoa powder, and salt. Stir until just combined.
  4. Fill Muffin Cups: Spoon batter into prepared mini muffin cups. Press one caramel candy into each brownie bite.
  5. Bake: Bake for 12-15 minutes until edges are set and tops are crackly. Sprinkle with sea salt.
  6. Cool and Serve: Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
