- 4 boneless skinless chicken breasts
Seasoning:

- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced bell peppers
- 1 cup salsa
- 1 cup shredded Mexican blend cheese
- 2 tablespoons chopped fresh cilantro
- Lime wedges for serving
Instructions
- Preheat the oven or grill: Preheat the oven to 400°F (200°C) or heat the grill to medium-high.
- Prepare the foil packets: Season the chicken breasts with chili powder, cumin, salt, and pepper. Place each chicken breast in the center of a foil sheet. Divide black beans, corn, and bell peppers over the chicken. Spoon salsa over the top and sprinkle with cheese. Fold the foil tightly to create packets.
- Cooking method: For the oven, bake packets on a baking sheet for 25–30 minutes. For the grill, cook packets directly on the grates for 20–25 minutes, turning halfway through.
- Finish and serve: Carefully open the packets, sprinkle with cilantro, and serve with lime wedges.
