  • 1 cup corn kernels (fresh, frozen, or canned)

Instructions

  1. Preheat the oven or grill: Preheat the oven to 400°F (200°C) or heat the grill to medium-high.
  2. Prepare the foil packets: Season the chicken breasts with chili powder, cumin, salt, and pepper. Place each chicken breast in the center of a foil sheet. Divide black beans, corn, and bell peppers over the chicken. Spoon salsa over the top and sprinkle with cheese. Fold the foil tightly to create packets.
  3. Cooking method: For the oven, bake packets on a baking sheet for 25–30 minutes. For the grill, cook packets directly on the grates for 20–25 minutes, turning halfway through.
