Rice Noodles:

  • 8 ounces rice noodles or udon noodles

Chicken:

  • 1 pound boneless skinless chicken breasts, thinly sliced

Vegetables:

  • 2 tablespoons vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Sauce:

  • 3 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon sesame oil
  • 1/4 cup water

Garnish:

  • sesame seeds and chopped fresh cilantro
  • lime wedges for serving (optional)

Instructions

  1. Cook the noodles: Prepare the noodles according to package instructions, drain, and set aside.
  2. Prepare the sauce: In a bowl, whisk together gochujang, soy sauce, rice vinegar, honey, sesame oil, and water until smooth.
  3. Cook the chicken: Heat oil in a skillet, cook chicken until browned. Add bell pepper, carrots, green onions, garlic, and ginger; stir-fry until fragrant.
  4. Combine ingredients: Add cooked noodles and sauce to the skillet. Toss everything together until well coated and heated through.
  5. Serve: Garnish with sesame seeds, cilantro, and lime wedges. Enjoy!
