- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup water
- 1 ½ pounds gold potatoes, diced (skin on or off)
- 1 cup heavy cream
- 2 cups chopped kale or spinach
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)

Instructions
- Cook the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up with a spoon, about 6–8 minutes.
- Saute Onion and Garlic: Remove excess grease if needed, then add the diced onion and cook until softened, about 3–4 minutes. Stir in minced garlic and cook for an additional minute.
- Add Potatoes and Broth: Add the diced potatoes, chicken broth, water, salt, pepper, and red pepper flakes if using. Bring to a boil, then simmer uncovered for 15–20 minutes until potatoes are tender.
- Finish the Soup: Stir in heavy cream and chopped kale. Simmer for another 5 minutes until greens are wilted and soup is heated through. Adjust seasoning if needed.
- Serve: Serve hot, topped with Parmesan cheese.
