- 1 tablespoon olive oil
- 1 pound smoked sausage or kielbasa (sliced into rounds)
- 1 small yellow onion (diced)
- 1 red bell pepper (diced)
- 2 cloves garlic (minced)
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 cup long-grain white rice (uncooked)
- 2 1/4 cups chicken broth
- 1 cup frozen peas
- Salt and black pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 4–5 minutes. Remove sausage and set aside.
- In the same skillet, add onion and bell pepper and sauté for 3–4 minutes until softened. Stir in garlic, paprika, oregano, and red pepper flakes, cooking for 1 minute until fragrant.
- Add the uncooked rice and stir to coat. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- Add the browned sausage and frozen peas, stir to combine, and cook uncovered for another 5–7 minutes until rice is tender and liquid is absorbed.
- Season with salt and pepper to taste. Garnish with parsley if desired and serve hot.
Notes
- For extra flavor, try using spicy sausage or adding a splash of hot sauce at the end.
- You can also stir in spinach or kale during the last few minutes of cooking for added greens.
