  • 1 tablespoon olive oil
  • 1 pound smoked sausage or kielbasa (sliced into rounds)
  • 1 small yellow onion (diced)
  • 1 red bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 cup long-grain white rice (uncooked)
  • 2 1/4 cups chicken broth
  • 1 cup frozen peas
  • Salt and black pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 4–5 minutes. Remove sausage and set aside.
  2. In the same skillet, add onion and bell pepper and sauté for 3–4 minutes until softened. Stir in garlic, paprika, oregano, and red pepper flakes, cooking for 1 minute until fragrant.
  3. Add the uncooked rice and stir to coat. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  4. Add the browned sausage and frozen peas, stir to combine, and cook uncovered for another 5–7 minutes until rice is tender and liquid is absorbed.
  5. Season with salt and pepper to taste. Garnish with parsley if desired and serve hot.

Notes

  • For extra flavor, try using spicy sausage or adding a splash of hot sauce at the end.
  • You can also stir in spinach or kale during the last few minutes of cooking for added greens.
