Description

This Sausage and Tater Tot Breakfast Quiche is a hearty and delicious morning meal featuring a crispy tater tot crust filled with savory sausage, creamy cottage cheese, eggs, and melted mozzarella. Perfect for a family breakfast or brunch, this recipe is easy to prepare and baked to golden perfection.

Ingredients

Scale

Crust

  • 2 cups frozen tater tots

Filling

  • ½ pound ground breakfast sausage
  • 6 large eggs
  • ½ cup low fat cottage cheese (2%)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup freshly grated mozzarella cheese

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Preheat and prepare crust: Preheat the oven to 400 degrees F. Grease a 9-inch deep-dish pie dish with butter. Place the frozen tater tots in an even layer covering the bottom and sides of the pie dish. Bake for 15 minutes to partially cook the tater tot crust.
  2. Mash the tater tots: After baking, remove the pie dish from the oven and gently mash the tater tots so they form an even layer that covers the entire bottom and sides, creating a crust.
  3. Reduce oven temperature: Lower the oven temperature to 350 degrees F to prepare for baking the quiche filling.
  4. Cook the sausage: In a skillet over medium to medium-high heat, fully cook and crumble the ground breakfast sausage until browned and cooked through. Remove from heat and let it cool slightly.
  5. Mix filling ingredients: In a large bowl, whisk together the eggs, low fat cottage cheese, salt, and black pepper until well combined. Stir in the freshly grated mozzarella cheese and the cooled cooked sausage to combine evenly.
  6. Assemble and bake quiche: Pour the egg and sausage mixture evenly over the mashed tater tot crust in the pie dish. Bake in the oven at 350 degrees F for 30 minutes, or until the center is set and the top is firm.
  7. Cool and serve: Remove the quiche from the oven and allow it to cool for at least 5 minutes before slicing. Garnish with freshly chopped parsley if desired and serve warm.

Notes

  • Partially baking and mashing the tater tots creates a crispy, sturdy crust that holds the filling well.
  • Cooking the sausage fully before mixing ensures no raw meat is in the quiche and enhances flavor.
  • Allowing the quiche to rest after baking helps it set properly for easy slicing.
  • Use low fat cottage cheese to keep the quiche lighter without sacrificing creaminess.
  • Freshly grated mozzarella melts better than pre-shredded for a creamier texture.
