For the Hashbrown Bites:

  • 3 cups frozen shredded hash browns (thawed)
  • 1/2 lb breakfast sausage (cooked and crumbled)
  • 1 cup shredded cheddar cheese
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • Nonstick cooking spray

Instructions

  1. Preheat the oven and prepare the muffin tin: Preheat the oven to 375°F and spray a mini muffin tin with nonstick cooking spray.
  2. Mix the ingredients: In a large bowl, combine the thawed hash browns, cooked sausage, and shredded cheddar cheese. In a separate small bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper. Pour the egg mixture over the hash brown mixture and stir until everything is evenly coated.
  3. Fill the muffin cups: Spoon the mixture into the prepared mini muffin cups, packing each one firmly to help them hold their shape.
  4. Bake: Bake for 20–25 minutes, or until golden brown and set in the center.
  5. Cool and serve: Let cool in the pan for 5 minutes before removing. Serve warm.
