Pasta:
- 12 ounces penne or your favorite pasta
Sauce:
- 1 pound Italian sausage (mild or spicy), casings removed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups sliced mushrooms
- 4 cups fresh baby spinach
- 1 jar (12 ounces) roasted red peppers, drained and chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Cook the pasta: Cook pasta according to package directions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- Sauté: In a large skillet over medium heat, cook the sausage until browned. Add onion, garlic, and mushrooms, sauté until softened.
- Prepare the sauce: Blend roasted red peppers and heavy cream until smooth. Pour into the skillet with the sausage and mushrooms. Add oregano, red pepper flakes, salt, and pepper. Simmer for 5 minutes.
- Combine: Add cooked pasta and spinach to the skillet. Toss until spinach wilts and everything is coated in the sauce.
- Finish: Stir in Parmesan cheese and reserved pasta water as needed. Serve hot, garnished with parsley.
