1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy), casings removed
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 3 medium russet potatoes, peeled and diced
- 4 cups low-sodium chicken broth
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup heavy cream
- 2 cups chopped kale or spinach
- grated Parmesan and red pepper flakes for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook, breaking it up with a spoon, until browned and fully cooked, about 6–8 minutes. Remove excess grease if needed.
- Add diced onion and garlic, and sauté for 3–4 minutes until softened.
- Stir in diced potatoes, chicken broth, Italian seasoning, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
- Stir in heavy cream and chopped kale or spinach, and simmer for another 3–5 minutes until greens are wilted.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with Parmesan and red pepper flakes if desired.
Notes
- For a lighter version, substitute half-and-half or use turkey sausage.
- This soup thickens as it sits—add extra broth when reheating if needed.
