Description

This hearty and creamy Sausage Potato Soup is a comforting dish perfect for a cozy night in. Made with flavorful Italian sausage, tender potatoes, and nutritious greens, this soup is a satisfying meal on its own.

1 tablespoon olive oil

  • 1 pound Italian sausage (mild or spicy), casings removed
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 medium russet potatoes, peeled and diced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup heavy cream
  • 2 cups chopped kale or spinach
  • grated Parmesan and red pepper flakes for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook, breaking it up with a spoon, until browned and fully cooked, about 6–8 minutes. Remove excess grease if needed.
  2. Add diced onion and garlic, and sauté for 3–4 minutes until softened.
  3. Stir in diced potatoes, chicken broth, Italian seasoning, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
  4. Stir in heavy cream and chopped kale or spinach, and simmer for another 3–5 minutes until greens are wilted.
  5. Taste and adjust seasoning if needed.
  6. Serve hot, garnished with Parmesan and red pepper flakes if desired.

Notes

  • For a lighter version, substitute half-and-half or use turkey sausage.
  • This soup thickens as it sits—add extra broth when reheating if needed.
