Ingredients
Scale
Meat and Eggs
- 1 tablespoon olive oil
- ½ pound ground beef
- ½ pound breakfast sausage
- 6 large eggs
- ¼ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
Vegetables and Cheese
- 1 cup shredded cheddar cheese
- ½ cup diced bell peppers
- ¼ cup diced onions
Wraps and Garnish
- 4 large flour tortillas
- 2 tablespoons chopped fresh cilantro (optional)
- Hot sauce or salsa for serving (optional)
Instructions
- Prepare Vegetables: Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers and sauté until softened, about 3–4 minutes.
- Cook Meat: Add ground beef and breakfast sausage to the skillet and cook until fully browned, breaking it up with a spatula as it cooks. Drain excess grease if needed.
- Whisk Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Scramble Eggs: Pour the egg mixture into the skillet with the meat and veggies. Stir gently until eggs are fully cooked and scrambled, about 3–5 minutes.
- Add Cheese: Remove skillet from heat and stir in shredded cheese until melted and combined evenly throughout the scramble.
- Warm Tortillas: Heat the flour tortillas in a microwave or in a dry skillet until pliable for easy rolling.
- Assemble Burritos: Spoon the beef and egg mixture evenly onto each tortilla. Sprinkle with chopped cilantro if desired, then drizzle with hot sauce or salsa if you like a bit of heat.
- Roll Burritos: Fold in the sides of the tortilla and roll tightly from one end to form burritos. Serve immediately or wrap in foil for later.
Notes
- Substitute ground turkey or chicken sausage for a lighter version.
- To make ahead, wrap burritos tightly in foil and refrigerate for up to 3 days or freeze for up to 1 month.
- Reheat burritos in the microwave or oven before serving.
