  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy), casings removed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 (14.5-ounce) can diced tomatoes with juice
  • 4 cups chicken broth
  • 1 (15-ounce) can white beans (such as cannellini), drained and rinsed
  • 1 1/2 cups chopped kale or spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Grated Parmesan cheese and chopped parsley for garnish

Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add sausage and cook until browned.
  2. Add onion, garlic, carrots, and celery, sauté until softened.
  3. Stir in tomatoes, broth, and beans. Season with Italian seasoning, salt, pepper, and red pepper flakes.
  4. Bring to a boil, then simmer for 15 minutes.
  5. Stir in kale or spinach and simmer for another 5 minutes.
  6. Adjust seasoning if needed. Serve hot, garnished with Parmesan and parsley.

Notes

  • For a creamy version, stir in 1/2 cup of heavy cream before serving.
