- 1 can (28 ounces) crushed tomatoes
- 6 cups chicken broth
- 1 package (9 ounces) refrigerated cheese tortellini
- 3 cups fresh spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Heat Olive Oil: In a large soup pot, heat olive oil over medium heat.
- Cook Sausage: Add Italian sausage, breaking it apart with a spoon, and cook until browned.
- Add Vegetables: Stir in onion, garlic, carrots, and celery. Cook until softened.
- Season: Add Italian seasoning and red pepper flakes. Cook for another minute.
- Add Tomato and Broth: Stir in crushed tomatoes and chicken broth. Bring to a boil.
- Simmer: Reduce heat and simmer for 15 minutes.
- Cook Tortellini: Add tortellini and cook until tender, following package directions.
