Sausages:

  • 8 pork sausages
  • 2 tablespoons olive oil

Onion Gravy:

  • 2 large yellow onions, thinly sliced
  • 2 teaspoons brown sugar
  • 1 teaspoon balsamic vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef stock
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Optional fresh thyme for garnish

Instructions

  1. Cook the Sausages: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook for 12–15 minutes until browned and cooked through. Set aside.
  2. Make the Onion Gravy: In the same skillet, add the remaining olive oil and sliced onions. Cook until softened. Add brown sugar and balsamic vinegar, cook to caramelize. Add garlic, then sprinkle flour over onions. Gradually add beef stock, Worcestershire sauce, salt, and pepper. Simmer until thickened.
  3. Finish the Dish: Return sausages to the skillet, simmer for a few minutes. Serve hot with mashed potatoes or crusty bread. Garnish with fresh thyme.

Notes

  • For a richer gravy, you can substitute half of the beef stock with red wine.
  • Chicken or vegetarian sausages can be used as alternatives.
