Zucchini:

  • 2 medium zucchini, sliced into half-moons

Cherry Tomatoes:

  • 1 cup cherry tomatoes, halved

Others:

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Heat the olive oil: Heat olive oil in a large skillet over medium heat.
  2. Cook garlic: Add minced garlic and cook for about 30 seconds until fragrant.
  3. Sauté zucchini: Add sliced zucchini and sauté for 4-5 minutes until it starts to soften.
  4. Add tomatoes and seasonings: Add cherry tomatoes, red pepper flakes, salt, and black pepper. Cook for another 3-4 minutes until zucchini is tender.
  5. Finish and serve: Remove from heat, stir in fresh basil. Sprinkle with Parmesan cheese if desired and serve warm.
