Pie Crust:

Filling:
- 4 large eggs (2 for filling, 1 for scramble, 1 for egg wash)
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked crumbled bacon or sausage
- 1 tablespoon chopped chives or green onions
- Salt and pepper to taste

Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare crust: Roll out the pie crusts on a floured surface and cut into 8 equal rectangles.
- Scramble eggs: Whisk and scramble 1 egg in a pan, season, and set aside.

- Assemble pop-tarts: Place filling on 4 rectangles, brush edges with egg wash, top with remaining rectangles, and seal edges.
- Top and bake: Brush with egg wash, add toppings if desired, and bake for 18–22 minutes until golden brown.
- Serve: Cool slightly before serving.
