Description

A quick and delicious breakfast recipe featuring fluffy scrambled eggs combined with tender, lightly crispy grated potato and fresh chives. Optional salami adds a savory, fatty touch, making it a satisfying and hearty start to your day.

Ingredients

Scale

Egg Mixture

  • 3 eggs
  • Salt, to taste
  • Dried garlic, to taste
  • Black pepper, to taste
  • 1 tablespoon sour cream
  • Chives, finely chopped, to taste

Potato

  • 1 large potato, peeled and grated

Additional Ingredients

  • Salami or other fatty sausage, optional (chopped)
  • Oil for greasing the pan (if not using sausage)

Instructions

  1. Prepare Potato: Peel and grate the potato; set it aside while you prepare the other ingredients.
  2. Heat Pan: If not using salami or fatty sausage, heat a little oil in a frying pan over medium heat.
  3. Cook Sausage (Optional): If using salami or fatty sausage, chop it into small pieces and cook in the heated pan for 2–3 minutes until fat is released, creating a flavorful base.
  4. Cook Potato: Add the grated potato to the pan and cook for 5–7 minutes, stirring occasionally until the potato is tender and lightly crispy.
  5. Prepare Egg Mixture: In a bowl, whisk together eggs, salt, dried garlic, black pepper, and sour cream until well combined.
  6. Combine Eggs and Potato: Push the cooked potatoes to one side of the pan. Pour the egg mixture into the empty side.
  7. Scramble Eggs: Let the eggs set for 1–2 minutes, then gently stir to scramble the eggs, mixing them thoroughly with the potatoes.
  8. Add Chives: Stir in the chopped chives and continue cooking until the eggs are just cooked through but still soft and creamy.
  9. Serve: Serve the scrambled eggs with grated potato and chives hot, directly from the pan for best flavor and texture.

Notes

  • Using salami or fatty sausage adds a rich flavor and reduces the need for additional oil.
  • For a dairy-free version, omit sour cream or substitute with a plant-based alternative.
  • Adjust seasoning to your taste, especially with garlic and black pepper.
  • This recipe can be doubled easily for more servings.
  • Serve with toast or fresh salad for a complete meal.
