Instructions
- Prepare Potato: Peel and grate the potato; set it aside while you prepare the other ingredients.
- Heat Pan: If not using salami or fatty sausage, heat a little oil in a frying pan over medium heat.
- Cook Sausage (Optional): If using salami or fatty sausage, chop it into small pieces and cook in the heated pan for 2–3 minutes until fat is released, creating a flavorful base.
- Cook Potato: Add the grated potato to the pan and cook for 5–7 minutes, stirring occasionally until the potato is tender and lightly crispy.
- Prepare Egg Mixture: In a bowl, whisk together eggs, salt, dried garlic, black pepper, and sour cream until well combined.
- Combine Eggs and Potato: Push the cooked potatoes to one side of the pan. Pour the egg mixture into the empty side.
- Scramble Eggs: Let the eggs set for 1–2 minutes, then gently stir to scramble the eggs, mixing them thoroughly with the potatoes.
- Add Chives: Stir in the chopped chives and continue cooking until the eggs are just cooked through but still soft and creamy.
- Serve: Serve the scrambled eggs with grated potato and chives hot, directly from the pan for best flavor and texture.
