Instructions
- Cook the Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic and sauté for 3-4 minutes until they become soft and fragrant.
- Make the Roux: Stir in the all-purpose flour to the melted butter and cook for 1-2 minutes, stirring constantly to form a roux and cook out the raw flour taste.
- Add Liquids: Slowly pour in the seafood or chicken broth along with the white wine if using, stirring continuously until the mixture thickens. Then add the heavy cream, Old Bay seasoning, paprika, salt, and pepper. Bring the soup to a gentle simmer.
- Add Seafood: Stir in the shrimp, lump crab meat, and chopped lobster meat into the simmering bisque. Cook for an additional 5-7 minutes, or until the shrimp turn pink and are fully cooked through.
- Serve: Garnish the bisque with fresh parsley if desired, and serve warm accompanied by crusty bread.
