Linguine:

  • 12 ounces linguine or spaghetti

Sauce:

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine
  • 1 cup cherry tomatoes, halved
  • 1 pound mixed seafood (such as shrimp, scallops, and mussels)
  • 1/2 cup heavy cream
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook the Pasta: Cook the pasta according to package directions until al dente; reserve 1/2 cup pasta water, then drain and set aside.
  2. Prepare the Sauce: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and red pepper flakes and sauté for about 1 minute until fragrant. Pour in the white wine and bring to a simmer for 2-3 minutes.
  3. Add Seafood and Tomatoes: Add the cherry tomatoes and cook for another 3 minutes until they start to soften. Add the mixed seafood and cook for 4-5 minutes until done.
  4. Finish the Dish: Stir in the heavy cream and lemon juice. Season with salt and pepper. Add the cooked pasta and toss to coat, adding reserved pasta water if needed. Sprinkle with parsley and serve with Parmesan.

  • Use fresh or frozen seafood mix; thaw if frozen and pat dry before cooking.
