These Seed Cycling Energy Bites are a nutritious and delicious snack packed with seeds, nut butter, and a touch of sweetness. Perfect for a quick energy boost or a satisfying treat.

For the Energy Bites:
- 1 cup rolled oats
- 1/2 cup natural nut butter (such as almond or peanut butter)
- 1/4 cup raw honey or maple syrup
- 2 tablespoons ground flax seeds
- 2 tablespoons raw pumpkin seeds
- 2 tablespoons raw sunflower seeds
- 2 tablespoons sesame seeds
- 1/4 cup mini dark chocolate chips (optional)
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- In a large mixing bowl, combine the rolled oats, ground flax seeds, pumpkin seeds, sunflower seeds, and sesame seeds.
- Add the nut butter, honey or maple syrup, vanilla extract, and salt. Stir until well combined.
- If using, fold in the mini chocolate chips.
- Scoop out tablespoon-sized portions and roll into balls using your hands.
- Place the energy bites on a parchment-lined plate or tray.
- Refrigerate for at least 30 minutes to firm up, then transfer to an airtight container and store in the refrigerator for up to 1 week.
Notes
- For a boost of protein, add 1-2 tablespoons of chia seeds or hemp hearts.
- You can swap the nut butter for sunflower seed butter to make these nut-free.
