For the Noodles:
- 8 oz spaghetti or rice noodles
For the Sauce:
- 3 cups broccoli florets
- 1/4 cup almond butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1–2 tablespoons water (to thin sauce as needed)
For Garnish:
- 1/4 cup sliced almonds, toasted
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- Cook the Noodles: Cook the noodles according to package instructions. In the last 2 minutes of cooking, add the broccoli florets to the boiling water with the noodles. Drain and rinse under cold water to stop cooking.
- Prepare the Sauce: In a small bowl, whisk together almond butter, soy sauce, rice vinegar, sesame oil, maple syrup, ginger, garlic, and water until smooth and creamy.
- Toss and Serve: Toss the noodles and broccoli with the sauce until well coated. Serve at room temperature or chilled. Top with toasted almonds, green onions, and a sprinkle of sesame seeds before serving.

- For extra protein, add grilled tofu or shredded chicken.
