For the Noodles:

  • 8 oz spaghetti or rice noodles

For the Sauce:

  • 3 cups broccoli florets
  • 1/4 cup almond butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 12 tablespoons water (to thin sauce as needed)

For Garnish:

  • 1/4 cup sliced almonds, toasted
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Cook the Noodles: Cook the noodles according to package instructions. In the last 2 minutes of cooking, add the broccoli florets to the boiling water with the noodles. Drain and rinse under cold water to stop cooking.
  2. Prepare the Sauce: In a small bowl, whisk together almond butter, soy sauce, rice vinegar, sesame oil, maple syrup, ginger, garlic, and water until smooth and creamy.
  3. Toss and Serve: Toss the noodles and broccoli with the sauce until well coated. Serve at room temperature or chilled. Top with toasted almonds, green onions, and a sprinkle of sesame seeds before serving.
