Shrimp Fajitas:

  • 1 pound large shrimp (peeled and deveined)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 small red onion (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • juice of 1 lime
  • warm flour or corn tortillas for serving
  • optional toppings: sour cream, avocado, salsa, fresh cilantro

Instructions

  1. In a large bowl, combine the shrimp, sliced peppers, and onion. Drizzle with olive oil and sprinkle with spices.
  2. Toss everything together until well coated.
  3. Heat a large skillet over medium-high heat. Add the shrimp and veggies and cook for 5–7 minutes.
  4. Squeeze fresh lime juice over the mixture.
  5. Serve immediately in warm tortillas with toppings.
