Shrimp Fajitas:
- 1 pound large shrimp (peeled and deveined)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 small red onion (sliced)
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- juice of 1 lime
- warm flour or corn tortillas for serving
- optional toppings: sour cream, avocado, salsa, fresh cilantro
Instructions
- In a large bowl, combine the shrimp, sliced peppers, and onion. Drizzle with olive oil and sprinkle with spices.
- Toss everything together until well coated.
- Heat a large skillet over medium-high heat. Add the shrimp and veggies and cook for 5–7 minutes.
- Squeeze fresh lime juice over the mixture.
- Serve immediately in warm tortillas with toppings.

- For added flavor, marinate the shrimp and veggies for 15–30 minutes before cooking.
