Pasta:

  • 8 ounces fettuccine or spaghetti pasta

Shrimp:

  • 1 pound large shrimp (peeled and deveined)

Sauce:

  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil (chopped)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Extra fresh basil and Parmesan for garnish

Instructions

  1. Cook the pasta: Prepare the pasta according to package instructions until al dente. Set aside, saving 1/2 cup of pasta water.
  2. Sear the shrimp: Season shrimp with salt and pepper. Sear in a skillet over medium-high heat until pink and opaque. Remove shrimp and set aside.
  3. Make the sauce: In the same skillet, sauté garlic, add diced tomatoes, simmer, then add cream, Parmesan, salt, pepper, and red pepper flakes. Let simmer until slightly thickened.
  4. Combine ingredients: Return shrimp to skillet, add pasta, toss together, adding pasta water if needed. Stir in fresh basil.
  5. Serve: Garnish with basil and Parmesan before serving.
