Pasta:
- 8 ounces fettuccine or spaghetti pasta
Shrimp:
- 1 pound large shrimp (peeled and deveined)
Sauce:
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil (chopped)
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Extra fresh basil and Parmesan for garnish
Instructions
- Cook the pasta: Prepare the pasta according to package instructions until al dente. Set aside, saving 1/2 cup of pasta water.
- Sear the shrimp: Season shrimp with salt and pepper. Sear in a skillet over medium-high heat until pink and opaque. Remove shrimp and set aside.
- Make the sauce: In the same skillet, sauté garlic, add diced tomatoes, simmer, then add cream, Parmesan, salt, pepper, and red pepper flakes. Let simmer until slightly thickened.
- Combine ingredients: Return shrimp to skillet, add pasta, toss together, adding pasta water if needed. Stir in fresh basil.
- Serve: Garnish with basil and Parmesan before serving.

- Enhance the flavor by adding white wine with the tomatoes.
- For a lighter version, substitute half-and-half for heavy cream.
