Description

Indulge in a delightful dish of Shrimp Scampi with Spaghetti, where succulent shrimp are tossed in a flavorful garlic and lemon butter sauce, served over perfectly cooked pasta. This classic Italian-inspired recipe is quick and easy to make, perfect for a satisfying weeknight dinner or a special occasion.

Ingredients

Scale

For the Shrimp Scampi:

  • 12 ounces spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup dry white wine or chicken broth
  • juice of 1 lemon
  • ¼ cup chopped fresh parsley
  • salt and black pepper to taste
  • grated Parmesan cheese for serving

Instructions

  1. Cook the Spaghetti: Cook spaghetti according to package instructions until al dente. Drain, reserving ½ cup of pasta water.
  2. Prepare the Shrimp: In a large skillet, heat olive oil and 2 tablespoons butter over medium heat. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Make the Sauce: Pour white wine or chicken broth into the skillet and simmer for 2 minutes to reduce slightly. Stir in remaining butter, lemon juice, and reserved pasta water. Return shrimp to the skillet and toss to coat in the sauce.
  4. Combine and Serve: Add cooked spaghetti and chopped parsley, tossing everything together until well combined and heated through. Serve immediately with grated Parmesan cheese.

Notes

  • For a richer flavor, add a splash of heavy cream to the sauce.
  • Substitute gluten-free pasta if desired.
  • Garnish with extra lemon wedges.
