Description

This Sicilian Cauliflower Salad is a refreshing and flavorful dish that brings together the vibrant Mediterranean flavors of olives, capers, sun-dried tomatoes, and fresh herbs. Main Salad:

  • 1 medium head cauliflower, cut into small florets
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup pitted Kalamata olives, sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons capers, rinsed and drained
  • 1/4 cup toasted pine nuts
  • 1/4 cup finely diced red onion
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Blanch Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and blanch for 2-3 minutes until just tender but still crisp. Drain immediately and run under cold water to stop the cooking process.
  2. Prepare Dressing: In a large bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, salt, and pepper.
  3. Combine Ingredients: Add the blanched cauliflower, chopped parsley, basil, olives, sun-dried tomatoes, capers, toasted pine nuts, and red onion. Toss until everything is well coated with the dressing.
  4. Chill and Serve: Taste and adjust seasoning if needed. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld. Garnish with extra herbs and lemon wedges before serving.
