These Slow Cooker BBQ Beef Brisket Tacos are a delicious Tex-Mex twist on traditional tacos. Tender, flavorful brisket is cooked low and slow in a savory BBQ sauce, then piled high into tortillas with crunchy coleslaw and fresh cilantro.
Ingredients
Beef Brisket:
2 1/2 to 3 pounds beef brisket (trimmed)
Spice Rub:
1 tablespoon chili powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon cumin, 1 teaspoon salt, 1/2 teaspoon black pepper
Additional Ingredients:
1 cup BBQ sauce (plus more for serving), 1/2 cup beef broth, 8–10 small flour or corn tortillas, 1 cup coleslaw mix or shredded cabbage, 1/4 cup chopped fresh cilantro, lime wedges for serving
Instructions
- Prepare Brisket: Mix spice rub ingredients and coat brisket. Place in slow cooker.
- Cook Brisket: Pour BBQ sauce and beef broth over brisket. Cook on low for 8–10 hours or high for 4–5 hours.
- Shred Brisket: Remove, shred, and return brisket to slow cooker.
- Assemble Tacos: Warm tortillas and fill with brisket, coleslaw, cilantro, and lime.

- For added flavor, sear the brisket before slow cooking.
- Pair with pickled onions or avocado.
