  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup beef broth or water
  • 1 tablespoon tomato paste
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

  • Fresh cilantro for garnish (optional)

Instructions

  1. Sauté Aromatics: Heat the vegetable oil in a skillet over medium heat. Add the finely chopped onion and sauté until soft and golden, about 5 minutes. Stir in the minced garlic and grated fresh ginger and cook for another minute, releasing their fragrant aromas.
  2. Add Spices: Sprinkle in the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper if using. Cook the mixture for about 30 seconds until the spices are fragrant, stirring continuously to prevent burning.
  3. Transfer to Slow Cooker: Move the sautéed onion and spice mixture into the slow cooker. Add the beef chuck cubes, diced tomatoes, tomato paste, full-fat coconut milk, brown sugar, beef broth or water, salt, and black pepper. Stir thoroughly to combine all ingredients evenly.
  4. Cook the Curry: Cover the slow cooker and cook on low for 8 hours or on high for 4 to 5 hours. Cook until the beef is tender and the sauce has thickened slightly, offering a rich and creamy consistency.
  5. Season and Garnish: Taste the curry and adjust seasoning as necessary with additional salt or spices. Garnish with fresh cilantro if desired before serving.
