Beef Curry:

  • 2 pounds beef stew meat (cut into chunks)
  • 1 tablespoon olive oil
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 3 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder
  • 1 teaspoon salt

Sauce:

  • 1 can (13.5 ounces) coconut milk
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce

Vegetables:

  • 2 medium potatoes (peeled and cubed)
  • 2 carrots (sliced)

Garnish and Serving:

  • Chopped fresh cilantro (for garnish)
  • Cooked rice (for serving)

Instructions

  1. Sear the Beef: In a large skillet, brown the beef in batches. Transfer to the slow cooker.
  2. Sauté Aromatics: In the same skillet, sauté onion, garlic, and ginger until fragrant.
  3. Add Spices: Stir in curry powder, cumin, coriander, turmeric, chili powder, and salt; cook briefly.
  4. Combine Ingredients: Transfer the mixture to the slow cooker. Add coconut milk, broth, tomato paste, sugar, and soy sauce.
  5. Cook: Add potatoes and carrots. Cook on low for 7–8 hours or high for 4–5 hours.
  6. Serve: Garnish with cilantro and serve hot over rice.

Notes

  • For a spicier curry, add 1 diced chili or ½ teaspoon cayenne pepper.
  • This dish also works well with lamb or chicken.
