Beef Curry:
- 2 pounds beef stew meat (cut into chunks)
- 1 tablespoon olive oil
- 1 large onion (chopped)
- 4 cloves garlic (minced)

- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon turmeric
- ½ teaspoon chili powder
- 1 teaspoon salt
Sauce:
- 1 can (13.5 ounces) coconut milk
- 1 cup beef broth
- 2 tablespoons tomato paste
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
Vegetables:
- 2 medium potatoes (peeled and cubed)
- 2 carrots (sliced)
Garnish and Serving:
- Chopped fresh cilantro (for garnish)
- Cooked rice (for serving)
Instructions
- Sear the Beef: In a large skillet, brown the beef in batches. Transfer to the slow cooker.
- Sauté Aromatics: In the same skillet, sauté onion, garlic, and ginger until fragrant.
- Add Spices: Stir in curry powder, cumin, coriander, turmeric, chili powder, and salt; cook briefly.
- Combine Ingredients: Transfer the mixture to the slow cooker. Add coconut milk, broth, tomato paste, sugar, and soy sauce.
- Cook: Add potatoes and carrots. Cook on low for 7–8 hours or high for 4–5 hours.
- Serve: Garnish with cilantro and serve hot over rice.
Notes
- For a spicier curry, add 1 diced chili or ½ teaspoon cayenne pepper.
