Beef:

  • 2 lbs beef chuck or stewing beef (cut into 1.5-inch cubes)

Seasonings:

  • 2 tablespoons vegetable oil
  • 1 large onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons Madras curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon tomato paste
  • 1 can (14 oz) chopped tomatoes
  • 1/2 cup beef broth or water
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish:

  • chopped fresh cilantro for garnish

Instructions

  1. Sear the Beef: Heat oil in a skillet and brown the beef cubes. Transfer to the slow cooker.
  2. Sauté Aromatics: In the same pan, sauté onion, garlic, ginger, spices, and tomato paste until fragrant.
  3. Add Tomatoes and Broth: Pour in chopped tomatoes and beef broth, bring to a simmer.
