Beef:
- 2 lbs beef chuck or stewing beef (cut into 1.5-inch cubes)
Seasonings:

- 1 large onion (finely chopped)
- 4 cloves garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 2 tablespoons Madras curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon tomato paste
- 1 can (14 oz) chopped tomatoes
- 1/2 cup beef broth or water
- 1 teaspoon salt
- 1/4 teaspoon black pepper

- chopped fresh cilantro for garnish
Instructions
- Sear the Beef: Heat oil in a skillet and brown the beef cubes. Transfer to the slow cooker.
- Sauté Aromatics: In the same pan, sauté onion, garlic, ginger, spices, and tomato paste until fragrant.
- Add Tomatoes and Broth: Pour in chopped tomatoes and beef broth, bring to a simmer.
