Ingredients
Beef:
1 1/2 pounds beef chuck roast, cut into large chunks
Broth:
1 tablespoon sesame oil, 4 cups beef broth
Sauce:
1/4 cup low-sodium soy sauce, 2 tablespoons hoisin sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar
Seasonings:
1 tablespoon minced garlic, 1 tablespoon fresh ginger (grated), 1 teaspoon chili garlic sauce (optional)
Additional:
3 packages ramen noodles (discard seasoning packets), 1 cup shredded carrots, 1 red bell pepper (thinly sliced), 2 cups baby spinach, sliced green onions and sesame seeds for garnish
Instructions
- Sear Beef: Heat sesame oil in a skillet, sear beef until browned. Transfer to slow cooker.
- Combine Ingredients: Add broth, soy sauce, hoisin sauce, rice vinegar, brown sugar, garlic, ginger, and chili garlic sauce to the slow cooker. Cook on low for 7–8 hours or high for 4–5 hours.
- Shred Beef: Shred beef, add back to slow cooker with noodles, carrots, and bell pepper. Cook on high for 15–20 minutes.
- Finish: Stir in spinach, serve in bowls, and garnish with green onions and sesame seeds.
Notes
- Add a soft-boiled egg for an authentic touch.
- For extra richness, stir in soy or coconut milk before serving.
- Adjust spice level to taste with more chili garlic sauce or sriracha.
