Beef:

  • 2 pounds beef chuck, cut into 1 1/2-inch cubes

Coating:

  • 3 tablespoons all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Stew:

  • 2 tablespoons olive oil
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 4 medium carrots, sliced
  • 3 medium potatoes, peeled and cubed
  • 3 celery stalks, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup frozen peas

Instructions

  1. Coat Beef: Toss beef cubes with flour, salt, and pepper. Brown in batches.
  2. Prepare Stew: Transfer beef to slow cooker. Add broth, tomato paste, Worcestershire sauce, herbs, and vegetables. Cook on low for 8-10 hours or high for 4-6 hours.
  3. Finish: Stir in peas 30 minutes before serving. Remove bay leaves.

Notes

  • For a thicker stew, mix 2 tablespoons cornstarch with 2 tablespoons water and stir it in during the last 30 minutes of cooking.
