- 1 cup sour cream

Instructions
- Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Brown the beef in batches and transfer to the slow cooker.
- Prepare the Sauce: Add onion, garlic, Worcestershire sauce, Dijon mustard, salt, pepper, and paprika to the slow cooker. Mix in the cream of mushroom soup and beef broth. Add mushrooms.
- Cook Slowly: Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is tender. Stir in sour cream 15 minutes before serving.
