Description

This Slow Cooker Cheesy Burger Flavored Soup is a comforting and hearty dish that combines the flavors of a cheeseburger in a warm and satisfying soup. Perfect for a cozy meal on a cold day!

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced

Soup Base:

  • 3 cups peeled and diced potatoes
  • 1 cup shredded carrots
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups low-sodium beef broth

Thickening and Finishing:

  • 2 tablespoons all-purpose flour
  • 1/4 cup water
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk or half-and-half

Garnish (optional):

  • Chopped pickles, green onions, or crumbled bacon

Instructions

  1. Brown the Beef: In a skillet over medium heat, cook the ground beef until browned and cooked through, about 6–8 minutes. Drain excess grease. Transfer the beef to the slow cooker.
  2. Combine Ingredients: Add diced onion, garlic, potatoes, carrots, basil, parsley, salt, pepper, and beef broth to the slow cooker. Stir to combine.
  3. Cook in Slow Cooker: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender.
  4. Thicken Soup: In a small bowl, whisk together flour and water until smooth. Stir the slurry into the soup, cover, and cook for another 15–20 minutes on high to thicken.
  5. Add Cheese and Milk: Reduce heat to low or warm, then stir in shredded cheddar cheese and milk until melted and creamy. Do not boil after adding the cheese.
  6. Serve: Serve hot, garnished as desired.

Notes

  • For a bacon cheeseburger twist, add cooked crumbled bacon just before serving.
