Chicken Chili:

- 1 can (15 ounces) kidney beans (drained and rinsed)
- 1 can (15 ounces) corn kernels (drained)
- 1 can (15 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 2 tablespoons tomato paste
- 2 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Toppings (optional):
- Shredded cheese
- Sour cream
- Chopped cilantro
- Sliced green onions
Instructions
- Place the chicken: Place the chicken breasts in the bottom of a 6-quart slow cooker.
- Add ingredients: Add the onion, garlic, bell pepper, beans, corn, tomatoes, tomato sauce, tomato paste, and chicken broth. Season with chili powder, cumin, paprika, salt, pepper, and cayenne if using.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
- Shred chicken: Remove chicken, shred, and return to the slow cooker. Cook for an additional 10-15 minutes.
- Serve: Serve warm with desired toppings.
