For the Chicken Satay:

  • 2 pounds boneless skinless chicken thighs, cut into large chunks
  • 1 cup canned coconut milk
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons red curry paste
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 teaspoon crushed red pepper flakes (optional)

For Garnish:

  • Chopped fresh cilantro
  • Chopped peanuts

Instructions

  1. In a medium bowl, prepare the sauce: Whisk together coconut milk, peanut butter, soy sauce, brown sugar, lime juice, red curry paste, minced garlic, grated ginger, and crushed red pepper flakes until smooth.
  2. Cook the chicken: Place chicken chunks in the slow cooker and pour the sauce over them, stirring to coat. Cook on low for 5-6 hours or high for 2-3 hours until chicken is tender.
  3. Shred and combine: Remove chicken, shred or leave in chunks. Stir the sauce until smooth, then mix chicken back in to coat.
  4. Serve: Garnish with cilantro and peanuts. Serve hot over rice or with naan bread.
