- 1 can (10 oz) diced tomatoes with green chiles
- 1/2 cup tomato sauce
- 1/2 cup beef broth
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups frozen tater tots
- 1 1/2 cups shredded cheddar cheese
- Chopped parsley for garnish (optional)
Instructions
- Cook the Ground Beef: In a skillet over medium heat, cook the ground beef with the diced onion and garlic until browned. Drain any excess fat.
- Transfer to Slow Cooker: Transfer the beef mixture to a slow cooker. Add kidney beans, corn, diced tomatoes, tomato sauce, beef broth, chili powder, smoked paprika, salt, and pepper. Stir to combine.
- Add Tater Tots: Layer the frozen tater tots evenly on top of the mixture.
- Cook: Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours.
- Add Cheese: In the last 15 minutes of cooking, sprinkle shredded cheddar cheese over the tater tots, cover, and cook until melted.
- Serve: Garnish with chopped parsley if desired and serve warm.
