This Slow Cooker Cowboy Casserole is a hearty and flavorful dish that is perfect for a cozy family dinner. Layers of seasoned ground beef, beans, corn, and tater tots are slow-cooked to perfection, then topped with melted cheese for a comforting meal that everyone will love.

  • 1 small onion (diced)
  • 3 cloves garlic (minced)

Additional Ingredients:

  • 1 can (15 oz) kidney beans (drained and rinsed)
  • 1 can (15 oz) corn (drained)
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1/2 cup tomato sauce
  • 1/2 cup beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups frozen tater tots
  • 1 1/2 cups shredded cheddar cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the Ground Beef: In a skillet over medium heat, cook the ground beef with the diced onion and garlic until browned. Drain any excess fat.
  2. Transfer to Slow Cooker: Transfer the beef mixture to a slow cooker. Add kidney beans, corn, diced tomatoes, tomato sauce, beef broth, chili powder, smoked paprika, salt, and pepper. Stir to combine.
  3. Add Tater Tots: Layer the frozen tater tots evenly on top of the mixture.
  4. Cook: Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours.
  5. Add Cheese: In the last 15 minutes of cooking, sprinkle shredded cheddar cheese over the tater tots, cover, and cook until melted.
  6. Serve: Garnish with chopped parsley if desired and serve warm.
