Chicken and Sauce:

  • 2 pounds boneless skinless chicken breasts

  • 1 cup low-sodium chicken broth
  • 1 teaspoon Italian seasoning

  • 1 package (8 ounces) cream cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 12 ounces penne pasta, cooked al dente
  • 2 cups fresh spinach (optional)
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Prepare the Chicken: Place chicken breasts in the slow cooker. Add onion, garlic, diced tomatoes, cream of chicken soup, chicken broth, Italian seasoning, salt, and pepper.
  2. Cook: Cover and cook on low for 5 to 6 hours or on high for 3 hours until chicken is tender.
  3. Shred and Add Cheese: Shred the chicken in the slow cooker. Stir in cream cheese and Parmesan until melted and smooth.
