  • 1 cup salsa
  • 1 cup low-sodium chicken broth

Seasonings and Rice:

  • 1 cup long-grain white rice, uncooked
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Garnish:

  • 1 ½ cups shredded Mexican blend cheese
  • Chopped fresh cilantro for garnish

Instructions

  1. Prepare the Slow Cooker: Lightly grease the slow cooker. Place chicken breasts at the bottom.
  2. Add Ingredients: Add black beans, corn, diced tomatoes, salsa, chicken broth, seasonings. Stir gently.
  3. Cook: Cover and cook on low for 4–5 hours until chicken is tender.
  4. Shred Chicken: Remove chicken, shred, then return to the slow cooker.
  5. Add Rice: Stir in uncooked rice, cover, and cook on high for 45–60 minutes.
