Chicken:
- 2 pounds boneless, skinless chicken thighs or breasts
Vegetables:
- 1 red onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- ½ cup kalamata olives, pitted
Marinade:
- ¼ cup fresh lemon juice
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon crushed red pepper flakes (optional)
For Serving:
- ½ cup crumbled feta cheese
- fresh parsley, chopped, for garnish
Instructions
- Prepare Vegetables: Place the sliced onion, bell peppers, and olives in the bottom of the slow cooker.
- Cook Chicken: Lay the chicken over the vegetables.
- Make Marinade: In a small bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, pepper, paprika, and red pepper flakes.
- Add Marinade: Pour the marinade over the chicken and vegetables.
- Cook: Cover and cook on low for 5-6 hours or on high for 2½-3 hours until chicken is tender.
- Serve: Sprinkle with feta and parsley before serving. Serve over rice, quinoa, or with warm pita bread.
