Beef Stew:
- 2 pounds beef stew meat (cut into 1.5-inch cubes)
- 2 tablespoons olive oil
Vegetables:
- 1 large onion (chopped)
- 3 cloves garlic (minced)
- 3 medium carrots (sliced)
- 2 stalks celery (sliced)
- 2 cups baby potatoes (halved)
Stew Seasonings:
- 1 (14.5-ounce) can diced tomatoes (with juice)
- 1/4 cup tomato paste
- 2 cups beef broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
Garnish:
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Prepare Beef: Sear the beef in batches until browned on all sides. Transfer beef to the slow cooker.
- Sauté Vegetables: In the same skillet, sauté onions and garlic, then transfer to the slow cooker.
- Add Ingredients: Add carrots, celery, potatoes, tomatoes, tomato paste, broth, herbs, salt, and peppers. Stir gently to combine.
- Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until beef is tender and vegetables are cooked.
- Adjust Seasoning: Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
Notes
- For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it in during the last 30 minutes of cooking.
- You can also add chopped green beans or mushrooms for extra vegetables.
