Description

This Slow Cooker Italian Beef Stew is a hearty and comforting dish that is perfect for a cozy meal. Tender beef simmered with vegetables and Italian herbs in a rich tomato broth, this stew is packed with flavor and is easy to make in the slow cooker.

Beef Stew:

  • 2 pounds beef stew meat (cut into 1.5-inch cubes)
  • 2 tablespoons olive oil

Vegetables:

  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 3 medium carrots (sliced)
  • 2 stalks celery (sliced)
  • 2 cups baby potatoes (halved)

Stew Seasonings:

  • 1 (14.5-ounce) can diced tomatoes (with juice)
  • 1/4 cup tomato paste
  • 2 cups beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)

Garnish:

  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Prepare Beef: Sear the beef in batches until browned on all sides. Transfer beef to the slow cooker.
  2. Sauté Vegetables: In the same skillet, sauté onions and garlic, then transfer to the slow cooker.
  3. Add Ingredients: Add carrots, celery, potatoes, tomatoes, tomato paste, broth, herbs, salt, and peppers. Stir gently to combine.
  4. Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until beef is tender and vegetables are cooked.
  5. Adjust Seasoning: Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.

Notes

  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it in during the last 30 minutes of cooking.
  • You can also add chopped green beans or mushrooms for extra vegetables.
