  • 1 1/2 pounds sirloin steak, cut into bite-sized pieces

Instructions

  1. Sear the Steak: In a large skillet over medium-high heat, heat the olive oil. Add the sirloin steak pieces and cook for 2–3 minutes until browned on the outside. The steak does not need to be fully cooked at this stage.
  2. Prepare Slow Cooker Mixture: Transfer the seared steak pieces to a greased slow cooker. Add the diced potatoes, chopped onion, minced garlic, salt, black pepper, paprika, and dried thyme.
  3. Add Cream Mixture: In a small bowl, whisk together the sour cream and milk until smooth. Pour this mixture evenly over the ingredients in the slow cooker. Gently stir to combine all ingredients without breaking up the potatoes.
  4. Cook in Slow Cooker: Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours. Cook until the potatoes are tender and the flavors have melded together.
