- 1 can (28 ounces) crushed tomatoes
- 1 can (14.5 ounces) diced tomatoes
- 4 cups beef or chicken broth
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Brown the Meat: In a skillet over medium-high heat, brown the ground beef or turkey until fully cooked, breaking it apart as it cooks. Drain any excess fat if needed.
- Combine Ingredients: Add the cooked meat, uncooked rice, diced bell peppers, onion, garlic, crushed tomatoes, diced tomatoes, broth, tomato paste, oregano, basil, smoked paprika, salt, and black pepper to the slow cooker. Stir to combine.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the rice is tender and the peppers are soft.
- Adjust Seasoning and Serve: Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
Notes
- For extra flavor, stir in shredded cheese just before serving or top each bowl with a sprinkle of Parmesan.
