Lamb:
- 1 (4–5 pound) bone-in lamb shoulder
Garlic Herb Rub:
- 4 cloves garlic, sliced
- 2 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1 tablespoon sea salt
- 1 teaspoon black pepper
Additional:
- 1 cup chicken or beef broth
- 1 tablespoon lemon juice
- Optional vegetables: carrots, onions, and potatoes, cut into chunks
Instructions
- Preheat the oven: Preheat the oven to 325°F (165°C).
- Prepare the lamb: Make small slits all over the lamb shoulder and insert garlic slices. Mix olive oil, rosemary, thyme, salt, and pepper in a bowl. Rub the mixture all over the lamb.
- Roasting: Place the lamb in a roasting pan. Add optional vegetables. Pour broth and lemon juice into the pan. Cover with foil and roast for 3 1/2 to 4 hours. Uncover for the last 30 minutes to brown the top.
- Rest and Serve: Let the lamb rest for 10–15 minutes before carving or shredding. Serve with pan juices.
