For the Sauce:
- 1 pound cooked smoked chicken breast, shredded
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- 1/2 cup hot buffalo sauce
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- Salt and pepper to taste
- 2 green onions, thinly sliced
- Crumbled blue cheese and chopped parsley for garnish (optional)
Instructions
- Cook the Pasta: Cook penne pasta until al dente, drain, and set aside.
- Prepare the Chicken: Heat olive oil in a skillet, add smoked chicken, and cook briefly. Remove and set aside.
- Make the Sauce: In the same skillet, melt butter, sauté garlic, add buffalo sauce and heavy cream. Stir in cream cheese until melted. Mix in cheddar and mozzarella cheeses until creamy.
- Combine Everything: Add pasta and chicken to the skillet, toss to coat. Cook briefly, then top with green onions, blue cheese, and parsley.
