Bacon:

  • 4 slices thick-cut bacon, chopped

Vegetables:

  • 1 small onion, diced
  • 2 celery stalks, diced
  • 2 medium carrots, diced
  • 2 medium potatoes, peeled and diced

Broth and Dairy:

  • 2 cups fish stock or chicken broth
  • 1 cup whole milk
  • 1 cup heavy cream

Other:

  • 8 oz smoked salmon, flaked into bite-sized pieces
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Oyster crackers or crusty bread for serving

Instructions

  1. Cook Bacon: In a large pot over medium heat, cook the chopped bacon until crisp. Remove bacon with a slotted spoon and set aside, leaving about 1–2 tablespoons of bacon fat in the pot.
  2. Sauté Vegetables: Add the diced onion, celery, and carrots. Sauté for 5–6 minutes until softened.
  3. Add Potatoes and Broth: Stir in the diced potatoes and pour in the fish stock or chicken broth. Bring to a boil, then reduce heat and simmer for about 15 minutes or until potatoes are tender.
  4. Finish Chowder: Stir in the milk and heavy cream, then add the smoked salmon. Cook for another 5 minutes until heated through. Remove from heat and stir in the fresh dill, parsley, and lemon juice. Season with salt and pepper.
  5. Serve: Ladle into bowls and garnish with the crispy bacon. Serve hot with oyster crackers or crusty bread.
