Bread:
- 4 slices hearty multigrain or rye bread
Smoked Salmon:
- 4 oz smoked salmon (thinly sliced)
Cream Cheese Mixture:
- 2 oz cream cheese (softened)
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
- 1 teaspoon fresh dill (chopped)
- 1/4 teaspoon black pepper
Additional:
- 1/2 small cucumber (thinly sliced)
- 1/4 small red onion (thinly sliced)
- A handful of arugula or baby spinach
Instructions
- Prepare Cream Cheese Mixture: In a small bowl, mix the cream cheese, mayonnaise, lemon juice, dill, and black pepper until smooth and spreadable.
- Assemble Sandwich: Toast the bread slices if desired. Spread the cream cheese mixture evenly on all slices of bread. Layer smoked salmon on two of the slices, then top with cucumber slices, red onion, and arugula or spinach. Place the remaining bread slices on top to complete the sandwiches.
