  • 1 tablespoon olive oil
  • 12 ounces smoked sausage, sliced into rounds
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium Yukon Gold potatoes, diced
  • 1 large apple (such as Honeycrisp), peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the Sausage: Heat olive oil in a large pot. Brown the sliced smoked sausage for 4-5 minutes, then set aside.
  2. Sauté Aromatics: Sauté diced onion until softened, then add minced garlic and cook for another minute.
  3. Add Ingredients: Add potatoes, apple, chicken broth, thyme, paprika, salt, and pepper. Bring to a boil.
  4. Simmer: Reduce heat and simmer for 15 minutes until potatoes are tender.
  5. Finish Soup: Return sausage to the pot, stir in heavy cream, and simmer for 5 more minutes.
  6. Adjust Seasoning: Taste and adjust seasoning. Garnish with parsley and serve warm.
