- 1 tablespoon olive oil
- 12 ounces smoked sausage, sliced into rounds
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium Yukon Gold potatoes, diced
- 1 large apple (such as Honeycrisp), peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- Fresh parsley for garnish
Instructions
- Brown the Sausage: Heat olive oil in a large pot. Brown the sliced smoked sausage for 4-5 minutes, then set aside.
- Sauté Aromatics: Sauté diced onion until softened, then add minced garlic and cook for another minute.
- Add Ingredients: Add potatoes, apple, chicken broth, thyme, paprika, salt, and pepper. Bring to a boil.
- Simmer: Reduce heat and simmer for 15 minutes until potatoes are tender.
- Finish Soup: Return sausage to the pot, stir in heavy cream, and simmer for 5 more minutes.
