  • 1 can (14 ounces) sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 1 ½ cups shredded sweetened coconut (divided)
  • pinch of salt

Instructions

  1. In a medium saucepan over low heat, combine sweetened condensed milk, chocolate chips, and butter. Stir constantly until the chocolate is melted and the mixture is smooth.
  2. Remove from heat and stir in vanilla extract, salt, and ½ cup of the shredded coconut. Transfer the mixture to a bowl and chill in the refrigerator for at least 2 hours or until firm enough to scoop.
  3. Once firm, use a small cookie scoop or spoon to portion out the fudge and roll into 1-inch balls. Roll each truffle in the remaining 1 cup shredded coconut until fully coated.
  4. Chill for another 30 minutes before serving for best texture.
