Instructions

  2. Combine Base Ingredients: In a large bowl, whisk together the 3 whole eggs, 15g sugar, 1/4 tsp salt, 20g all-purpose flour, 180ml milk, and 1 tsp vanilla extract until the mixture is smooth and fully incorporated.
  3. Whip Egg Whites: In a separate clean bowl, whisk the 3 egg whites to soft peaks. Gradually add 35g sugar while continuing to whisk until stiff peaks form, ensuring the whites are glossy and voluminous.
  4. Fold Egg Whites into Batter: Gently fold the whipped egg whites into the egg mixture, taking care not to deflate the mixture, until just combined and evenly incorporated to maintain airiness.
  5. Fill and Bake: Pour the batter into the prepared baking dish or ramekins, filling them about three-quarters full to allow room for rising.
  6. Bake: Place in the oven and bake for 13-15 minutes, or until the top is golden brown and the center is set but still soft to touch.
  7. Finish and Serve: Remove from the oven and dust with powdered sugar before serving to add a delicate sweetness and decorative touch.
