Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla: Add the eggs one at a time, beating well after each addition, then stir in the vanilla.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Stir in oats and raisins: Fold in the oats, raisins, and nuts if using.
- Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are still soft.
- Cool: Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

- For extra plump raisins, soak them in warm water for 10 minutes and drain before adding.
