  • 2 tablespoons olive oil
  • 6 cloves garlic, thinly sliced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin (optional)
  • 4 slices day-old crusty bread, torn into pieces
  • Salt and black pepper to taste
  • 4 large eggs
  • Chopped fresh parsley for garnish

Instructions

  1. Heat the olive oil: In a large pot over medium heat, warm olive oil. Add sliced garlic and cook for 1-2 minutes until golden.
  2. Add seasonings: Stir in smoked paprika and cumin. Add torn bread, coat with garlic and oil.
  3. Pour in broth: Add broth, bring to a simmer. Season with salt and pepper. Simmer for 10 minutes.
  4. Poach the eggs: Crack eggs into the soup, space them apart. Cover and poach for 4-5 minutes.
